Pain aux canneberges et aux noix
Pour cette recette au blé entier, laisser une languette de pelure sur l'orange avant de la mettre dans le récipient Vitamix donnera une touche supplémentaire de saveur d'agrumes.
Ingrédients
- 100 g (1 tasse) de canneberges fraîches
- 1 grosse orange, pelée, coupée en deux
- 1 bande de pelure d'orange ou de citron de 1 po
- 60 ml (¼ tasse) d'huile d'olive légère
- 200 g (1 tasse) de sucre granulé
- 1 gros œuf
- 5 ml (1 c. à thé) d'extrait de vanille
- 7,5 ml (1 ½ cuillères à thé) de poudre à pâte
- 2,5 ml (½ cuillère à thé) de bicarbonate de soude
- 1 cuillère à thé de sel (facultatif)
- 240 g (2 tasses) de farine de blé entier
- 45 g (½ tasse) de noix de Grenoble
Instructions
- Préchauffer le four à 180 °C (350 °F). Enduire légèrement un moule à pain de 22 cm x 11 cm (8 1/2 po x 4 1/2 po) avec de l'enduit végétal ou de la graisse alimentaire.
- Mettre les canneberges dans le récipient Vitamix et verrouiller le couvercle.
- Sélectionner la Variable 4. Mélanger par pulsations 3 ou 4 fois. Arrêter l'appareil, racler les côtés et verrouiller le couvercle. Mélanger par pulsation quelques fois de plus pour hacher grossièrement. Verser dans un petit bol.
- Mettre les quartiers d'orange, le zeste, l'huile, le lait, le sucre, l'œuf et la vanille dans le récipient Vitamix dans l'ordre indiqué, puis verrouiller le couvercle.
- Sélectionner la Variable 1.
- Démarrer l'appareil, puis augmenter graduellement la vitesse jusqu'au maximum.
- Mélanger pendant 20 secondes.
- Mélanger la poudre à pâte, le bicarbonate de soude, le sel (facultatif) et la farine de blé entier dans un bol de grande taille. Bien mélanger.
- Verser le mélange de jus d'orange dans les ingrédients secs. Mélanger avec les mains, seulement jusqu'à ce que tous les ingrédients soient humides. Ajouter les noix hachées et les canneberges. Ne pas mélanger excessivement.
- Étaler la pâte dans le moule à pain préparé.
- Cuire pendant 55 à 60 minutes ou jusqu'à ce qu'un cure-dent inséré au centre en ressorte propre. Laisser refroidir sur une grille métallique pendant 30 minutes, puis retirer délicatement du moule à pain et laisser refroidir complètement avant de trancher.

Go-to Favorite quickbread recipe
Love this bread. Quick, easy, good for you. A Whole Orange! I make this when I need to bring a snack and/or just for family. Everyone has loved it. They're shocked how easy it is to mix in a Vitamix and bake traditionally or as muffins.

This was my first recipe with my new Vitamix …I and no whole wheat flour but I replaced with almond flour…moist and not too sweet ! it was terrific ! I did it again.

I Just Made an Eggless Version...
I just replaced the egg with 1 Banana and I used 1 cup of monk fruit instead of sugar.... GUYS, it's even BETTER! You MUST try it! It's downright addictive.

Great flavor
We made this with almond flour (in the same amount) as we didn’t have any whole wheat flour. We also used a really large orange. This resulted in very soggy bread. We will try it again though with with a smaller orange and do some more research on the quantity of almond flour that should be used.

Love tasting orange flabor
Recently bought my Vitamix to blend frozen smoothies. I love the opportunity to earn points baking stuff. Making the Cranberry Nut Bread look easy for my first try at making something other than smoothies. Easy for me and tasty, healthy bread for my family. I even gave a loaf to my neighbor.

Excellent & Easy
This was so easy to make when using my old Vitamix 7500 for both chopping and mixing. One correction is needed, I think, and that’s to add 1/4 cup milk to the Ingredients List. Without this, I think my loaf would have been very dry, more like actual bread. The photo of my loaf vs the recipe’s photo of a slice shows the difference a little milk makes, and someone included milk in the instructions.
I go totally plant-based, so I subbed a chia egg (1 T chia seeds + 1/2 cup warm water) for the large egg and used soy milk instead of dairy milk. I didn’t have light olive oil, so I used our MCT oil (a very light, healthy form of coconut oil), and my whole wheat flour was stone-ground. I don’t think these changes made much difference in taste, but it did make this sweet bread a bit healthier. ;)
Next time, I plan to add 1/4-1/3 cup whole frozen cranberries but no extra sugar. This is too sweet for my taste and I LOVE cranberries, so adding some whole or halves of berries should offset the sugar while giving it even more cranberry flavor. The top crisped up nicely bc I sprinkled it with turbinado sugar before baking. I’ll definitely make this often!
