Farine de haricots sans gluten
Une variante de farine faite de légumineuses séchées et broyées pour les mets sans gluten.
- 290 g (2 tasses) de pois chiches séchés
- 200 g (2 tasses) de fécule de tapioca
- 240 g (2 tasses) d'amidon de maïs
- Mettre les pois chiches séchés dans le récipient Vitamix, puis verrouiller le couvercle.
- Sélectionner la Variable 1.
- Démarrer l'appareil, puis augmenter la vitesse jusqu'au maximum.
- Mélanger pendant 45 secondes.
- Déposer dans un bol, puis ajouter la fécule de tapioca et la fécule de maïs.
- Bien mélanger à l'aide d'un fouet. Ranger dans un contenant hermétique.
Remarques du chef
Pour de meilleurs résultats, moudre 400 g (2 tasses) de grains à la fois.

Instead of heading to a "specialty" store, I get to blend and test various things at home. You can't/shouldn't substitute willy-nilly in recipes; there's some chemistry to understand there. But you don't "need" a professional gluten free chef. I mean, how many products in the shelves at stores, created by pros, are over-priced tasteless disappointments? However, the internet is FULL of recipes and suggested substitutions (ahem - such as where beans flours are concerned.) I've had some flops, and some amazing results. Black bean brownies are a hit in our house. That is, after several attempts to get it right :)

I can hardly wait to try making this flour. I am new to gluten-free baking but I am fully aware that you cannot just change out flours. That said, I've got several Keto/Paleo cookbooks that give suggestions & recipes on using alternate flours. I had my original Vitamix from 1997 to 2018. Had to upgrade when it just quit on me. LOVE my VitaMix!

I have been cooking and baking for about 7 years. That just does not work. Do not think that living gluten free is easy. I have had more flops learning to bake gluten free. Find and employ a person who is an experienced gluten free baker. We need good recipes.
