Sauce « comme au fromage »
Cette sauce faite de crème d'amande aux saveurs de nachos est délicieuse servie sur des pommes de terre, du brocoli ou comme trempette pour des croustilles.
Ingrédients
- 2 tasses (500 ml) d'eau
- 60 ml (¼ tasse) de jus de citron
- 100 g (½ tasse) de piments de Cayenne en conserve, égouttés
- 140 g (1 ⅓ tasse) d'amandes crues
- 12,5 ml (2 ½ cuillères à thé) de poudre d'oignon
- ½ tasse (40 g) de levure alimentaire
- 2 cuillères à thé de sel
Instructions
- Mettre tous les ingrédients dans le récipient Vitamix dans l'ordre indiqué, puis verrouiller le couvercle.
- Sélectionner la Variable 1.
- Démarrer l'appareil et augmenter graduellement la vitesse jusqu'à la Variable 10, puis passer à la vitesse élevée.
- Mélanger pendant 3 minutes ou jusqu'à ce qu'une épaisse vapeur s'échappe du couvercle ventilé.
Remarques
Cette sauce vegan au « fromage » est parfaite en trempette pour les nachos ou servie sur des macaronis.

Decent as it. Even better if you modify slightly
Pretty good sauce. I don't think the basic sauce as written is gonna pass for real cheese dip anytime soon. However, I still think it's tasty.
One slight addition, I added maybe 3-4 tbps of taco seasoning to the sauce and it really made it better. We were dipping tortilla chips in it and most people said they wouldn't have known it was cheese-less unless I told them. They would have only thought it was bit 'different'. Overall, i'm keeping this recipe. Good stuff.

Surprisingly YUMMY!
Wow, I never expected a vegan cheese to be so fulfilling! I made some cauliflower rice, sauteed it in coconut oil with some seasoning and then poured this sauce in. If you're trying to eat whole foods and miss comforts like macaroni and cheese, this will fill that void.

Great for vegans!
The not-so-cheese recipe is great for vegans. The cheese sauce tastes wonderful and its easy to make. If you are cooking for yourself make sure to use half the recipe.

Wow!
I was surprised at how yummy this 'cheese' sauce turned out! I did change it up a bit, though. Instead of 2 C water, I used 1 C water & 1 C soymilk. I also cut down the lemon juice, but just ever so slightly!
I must add how much I love my Vitamix. It is a wonderful machine and it has made my vegan diet even more fullfilled. Vitamix rocks!

Great sauce
I modified this with leaving out the pimentos, reducing it to 1 tsp of salt and only 1 cup of water. I also blanched the almonds. It was incredible!

Far too salty
I was surprised when I saw the level of salt that goes into this particularly as the nut yeast is fairly 'salty' by itself. I couldn't eat it. A waste of expensive ingredients. I think I will try making it again without the salt.

Trying to convert the family, this failed.
I just bought an Ascent Vitamix and this was my 1st hot dish in it. I love the Vitamix perfomance. As for the recipe, it wasn’t great. The lemon juice was... maybe unnecessary. Otherwise, I think it would have been great. Family gave it thumbs down.
