- 3 cups (720 ml) water
- 1 cup (140 g) almonds
- 2 (30 g) dates, pitted, optional

- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute or until desired consistency is reached

- You may soak almonds in cold water for 4 hours or overnight. Dates were used to sweeten the milk, but feel free to try honey or other sweeteners instead. To make vanilla almond milk, add vanilla extract or fresh vanilla bean.
- Try doubling this recipe in the 64 ounce container to make enough for the week.

Store bought could never, ever compare! I use three dates, half of a vanilla bean, and a pinch of Himalayan pink salt to my 1 cup of overnight soaked almonds, for a perfect quart jar full every batch. So creamy and delicious! My kids stopped complaining about the switch away from dairy after I stopped buying store-bought nut milks, and started making it fresh. I use a fine mesh bag to strain the pulp, and dry it out in my oven on low, to recoup the pulp to use as nut flour. No waste, super cheap, super healthy! Win, win, win!

Rated 5 out of 5 by missdawes from so easy to make with my Vitamix Over the past 15 years I have tried probably 4 or 5 times to make almond milk - using the exact same recipe - with other non-Vitamix blenders. The outcome has been OK, but the quality has been worth the time and effort. I am so very very happy with the quality of the almond milk. It's lovely. I've made two batches in two days. The first batch was simply water and soaked almonds. The second batch had a single soaked date, and a little ginger and cinnamon powder. It was delicious. I mixed a couple of tablespoons of the pulp with half and avocado, and some cider vinegar/salt/black pepper - and used it as a dressing for homemade coleslaw. It tasted soooo good that I am definitely going to be doing that again.

Rated 5 out of 5 by Spyce from Delicious I finally got around to making almond milk. I made a batch in my Vitamix and one in my Kuvings juicer, and I preferred the one made in the Vitamix. Since I didn't care for the thin watery texture of the almond milk made in my Kuvings, I decided not to strain the batch that I made in the Vitamix. It was so rich and creamy! I will never buy store bought almond milk again, and I will make it in my Vitamix from now on. Make sure you drain and rinse the almonds after soaking overnight and use fresh water when blending the almonds.

I strained the almond pulp from the milk and dehydrated it at 95 degrees. When dried, I grind into almond flour. Now, I'm ready for desserts and even pizza! No waste!

Rated 5 out of 5 by melk1999 from Best way to make almond milk! I've made lots of almond milk using different blenders, but I have to say that my new Vitamix A3500 is the best! I used to have to strain the almond pulp, but not anymore! Using the Smoothie setting, this makes it perfectly creamy and no pulp! Please make sure you wash the almonds after you've soaked them and discard that water. Use only fresh water to make the milk.

I add an extra date, a pinch of salt, vanilla extract and cinnamon. I do strain it through a nut milk bag for extra smoothness. The residue or pulp I divide it into three parts, add sprouted rolled oats, almond milk, chia seeds, and fruits to make healthy snacks. Nothing goes to waste and it’s all natural. It’s so creamy and delicious!

Here is my recipe: After making almond milk I stain it through a nut bag, then I add 1 can of coconut milk into Vitamix + strained almond milk + dates + vanilla and blend it on high for about 1min! Easy tasty vegan creamer!
