Potage aux pommes de terre
Avec l'ajout d'oignons, de carottes, de céleri et de chou-fleur, ce potage aux pommes de terre est très savoureux. Réduisez-le en purée ou ajoutez-y des légumes à la fin de la préparation pour l'épaissir.
Ingrédients
- 360 ml (1 ½ tasse) de lait
- 80 ml (⅓ tasse) d'eau
- 2 (215 g) petites pommes de terre Russet
- 80 g (½ tasse) d'oignon, pelé, coupé en dés
- 1 (100 g) carotte, coupée en deux
- 1 branche (100 g) de céleri, coupé en cubes
- 100 g (1 tasse) de chou-fleur
- 1 ½ cube de bouillon de légumes
Instructions
- Cuire les pommes de terre dans le four à micro-onde pendant 8 minutes.
- Mettre l'oignon, la carotte, le céleri et le chou-fleur dans une casserole de 1,9 L (2 pintes), puis couvrir avec de l'eau.
- Amener à ébullition. Réduire le feu à feu moyen, puis cuire jusqu'à tendreté.
- Mettre de côté 225 ml (1 tasse comble) de légumes cuits.
- Mettre les légumes restants, le bouillon, les pommes de terre et le lait dans le contenant Vitamix, puis verrouiller le couvercle.
- Sélectionner la Variable 1.
- Démarrer l'appareil et augmenter graduellement la vitesse jusqu'à la Variable 10, puis passer à la vitesse élevée.
- Mélanger pendant 3 minutes en utilisant le pilon pour pousser les ingrédients dans les lames. Réduire la vitesse à la Variable 2, puis retirer la prise du couvercle.
- Ajouter les légumes et l'eau réservés par l'ouverture de la prise du couvercle.
- Mélanger pendant 5 secondes supplémentaires. Servir immédiatement.

Wonderful Potato Soup!!!
This was my first try with soup in the Vitamix and it was fantastic! I blended all the vegetables and left the all the diced potatoes unblended for texture- which was 3 cups diced potatoes, in case that helps. Someone mentioned their soup turning mustard color. Well, my vegetable bullion turned it a beautiful golden yellow. I loved it- made it seem decadently rich, like it had cheese in it! The soup tasted better than any potato soup I have ever had- and how healthy and fresh! I am still stunned at how good it was! I am not a cook- so I encourage anyone to make this! This is going to be a staple in my menu! It was thick and satisfying enough for a meal. Next time, I think I will have nan bread with it!

Meeehhhh.....
I followed the recipe to a “T” and it was so bland! I started reading the reviews and it appears that nearly everyone tweaked it in one way or another. I had to experiment with additions until it was palatable. I added more salt, cheese (including Asiago), sour cream, cayenne pepper......AFTER the additions, I enjoyed it. I think the test kitchen should read all of the reviewers “tweak methods” and maybe they’ll come up with a recipe that is delicious from the get go. Not trying to be a “negative Nancy” but I’m disappointed that this recipe wasn’t great....all of the others I have tried have been awesome. It’s the first dinner in ages for which my husband didn’t want a second helping . ☹️

Best blender and recipes in the world.
Have bought 4 . Given 3 of those to my children and 1 to a very special friend. It has changed our way of eating. Everything is much fresher, taste better and my husband does not eat veggies or so he thinks lol. Between him and I we have lost a total of 90 pounds in 8 months. Health is improving and owe it all to vitamix,because I can make everything fresh. Hats off to the vitamix.

Veganized and now a family favorite
I substituted almond milk for the dairy milk and vegetable broth for the chicken broth to make vegan. My family LOVES this soup. With all the veggies it's less than 100 calories per serving so it's also a dieter favorite!

Great soup!
Great recipe, I just tweaked a bit, used a slightly larger carrot and a purple onion, skipped the buillon and replaced with a dash of sea salt, turns out to taste just as good. Amazing puree with nice saffron-like color. (accidentally processed the reserved veggies a couple seconds too much, so they became small bits instead of chunks which would be better texture). Tossed some toasted nuts on top, with a pinch of fennel to lend a nice aroma. Me and my wife loved this delicious soup for dinner. Continuing to try the other recipes.
Recently had a surgery to remove a large kidney stone, was told my uric acid is way too high, and need to get a much more grassy diet, and steer clear of my beloved craft beers, sea foods, meat stews, offals and certain mushrooms in future. A long time anti-vegetarian, I was very depressed with the idea of having to chew through all the dull vegs as basis of daily meals. But surprisingly Vitamix is helping making this new phase of life less miserable, or to be honest, not miserable at all. Loving it!

Delicious!
So easy. I used almond milk and added spring onions. Only objection was the celery strings. Next time I will add all celery before puree phase and reserve more carrots and onions.

need to try again with a few tweaks
I wish I could state I loved the recipe however I thought it was rather bland. I felt it needed some flavor like cream, butter, or seasonings. I used 3 potatoes as I felt mine were not real big potatoes. I felt the soup was a little thick and pasty feeling as I ate it. The recipe did not state to peel the potatoes so I did not. But, I will try it again and peel them as well as add some cream, butter, and seasoning to it. I'm hoping the next batch will be better.

Delicious!
My husband and I loved this, and my husband loves highly seasoned food (which this is not!).
Thank you for such easy and delicious recipes. It makes my life so much easier. Also, I love my VitaMix which I have had since 2003. A great machine and a great company!
