Acorn Squash and Turmeric Soup
Combine the nutritional benefits of chicken broth, acorn squash, and turmeric with the fragrance and flavor kick of green curry paste.
Ingredients
- 550 g (4 cups) acorn squash, cooked, peeled, seeded
- 960 ml (4 cups) chicken stock, or vegetable broth
- 1 Tablespoon green curry paste
- 1 teaspoon ground turmeric
- salt and pepper, to taste
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 5 minutes 45 seconds, or until heavy steam escapes the lid plug.
Notes
Salt and pepper should always be used to taste - after blending the soup, try it; if the soup is missing flavor, add a little more salt and pepper. If using our traditional containers, wash immediately to lessen the effects of the turmeric coloring the container.

Tumeric Tips
loved this recipe and even up-ed the tumeric which has shown great promise in scientific community on cognition protection! as well as an anti-inflammatory and immune enhancer.
Add a tiny amount of black pepper as it increases bioavailability of the tumeric.
Also the staining can be addressed with sunlight. The yellow chemical is photo-sensitive.
if on counter, try hydrogen peroxide.

Caution!
This recipe turned my Vitamix container an ugly green. Vitamix customer service had me try a number of cleaning methods, but none worked. I am pleased that Vitamix is sending me a replacement container at no cost to me.

tumeric stain
Easy, creamy loved it.The tumeric staining quality appears to have permanently stained

Pretty good
So disclaimer: I substituted butternut squash for acorn and red curry paste for green (because they were what was already in my kitchen).
Pros: very flavorful (I will back off the curry paste next time or try it with green), very few ingredients, very easy to put together, perfectly warming for the snowy winter afternoon we made it, cutting the quantities in half made a generous amount for lunch and dinner with another two meals put in the freezer.
Cons: Pretty spicy, directions were a little unclear in terms of squash quantity, if I had used the quantities described in the original recipe it would have overflowed my container and probably gone bad before I had time to eat it.
On the whole, pretty tasty and I will probably try again with some minor adjustments.

The recipe sounds delicious, but I have a question. What is meant by "1 OTHER" acorn squash? A suggested weight would be helpful, too.

So Flavorful!
So good, I actually made my own green curry paste just to make this soup recipe. Unfortunately, it also turned my blender container green. I made an extra batch to freeze for later. Again, so good.
