Beetroot, Strawberry, Cranberry Smoothie
With its bright red colour and sweet cranberry/strawberry flavour, this smoothie makes it easy to fit the long-neglected beetroot into your menu.
Ingredients
- 540 ml (2½ cup) cranberry juice
- 75 g (¾ cup) cranberries
- 150 g (3 small) beetroot, cooked
- 150 g (1 cup) frozen strawberries
- 2 Tablespoons honey, or other sweetener, to taste
- 270 g (2 cups) ice cubes
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Start the machine, and increase to its highest speed.
- Blend for 1 minute or until desired consistency is reached. Serve immediately.
Notes
The consistency of this smoothie will turn out as more of a juice drink.

Good Mix
good mix but thought it a little strong flavor and too thick for me. I added half a cucumber and a little flax seed oil and voila! Much better for me

Great recipe for kids
I made this with children in my after school cooking clubs to celebrate Valentine's Day and they loved it. We couldn't taste the beet, which was a plus for them. The drink was tart and brightly colored.

This beet smoothie is bursting with color and flavor. I substituted the cranberry juice with two clementines because i did not have the cranberry juice on hand and it was so delicious!

Great recipe! If you can't find any cranberries, raspberries work as a great substitute. Also, try adding a lime and a bit of mint to taste.

Best Beet Smoothie
I dislike Beets; I really have a hard time enjoying them even when mixed in with other smoothie ingredients like other recipes I've tried from Vitamix.
I love this smoothie. The cranberry cuts into the earthy flavour of the Beets and is very refreshing. It blends easy and turns into more of a refreshing juice if you omit the ice. I use frozen cranberries & frozen beets and do a quick microwave defrost. Leave the recipe unchanged outside of your ice preference. The recipe is perfect!
