Creamy Cheese Sauce
This rich, creamy sauce is ideal for drizzling over steamed vegetables, in a lasagna, or for macaroni and cheese.
Ingredients
- 45 g (¼ cup) margarine
- 30 g (¼ cup) plain flour
- ¼ teaspoon salt, optional
- 320 ml (1⅓ cup) skimmed milk
- 225 g (8 ounces) Gruyère cheese, cubed
Directions
- Place butter, flour, salt and milk into the Vitamix Container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 5-6 minutes, or until heavy steam escapes through the lid plug opening.
- While machine is running, remove the lid plug.
- Place cheese through the lid plug opening. Blend for 1 minute, or until well-combined.
- Serve immediately.

Delicious and so easy!
This cheese sauce is so easy, put everything in the blender and blend until hot. No need to make a roux, no standing by the pan and constantly stirring and no lumps!

The Kitchen Workhorse!
I viewed the Vitamix demonstrations annually for years at the big Sydney agricultural show, before I finally bit the bullet and invested in a machine. I can't believe I waited so long and wasted so much time, when I could have been making my life in the kitchen easier. I just couldn't believe that it was as easy as the demonstrators made out. It was!
I use my Vitamix at least once daily - green smoothies for a quick getaway breakfast, nut butters on apple slices for mid-afternoon snacks, soups (from initial ingredients to serving hot), bechamel sauce for my lasagne, breadcrumbs, and the list is almost endless.
If I had one criticism (and it really is the ONLY criticism), it might be that getting every last scrap of any sticky ingredients (nut butters, ice creams, etc.) can be a bit of a pain. That awesome red rubber spatula is great, but in future evolutions of the product, perhaps a way to separate the blade casing from the base of the jug?!?
I guess most importantly for me, cleanup is ridiculously easy! My ordinary food processor sits rather forlornly on the other end of the bench, as I only use it if I need uniformly sliced or grated vegetables. It is such a pain to clean, that I rarely bother with it.
For anyone who is debating whether or not to invest in this machine, I can only tell you that it is a product that has genuinely improved my cooking skills by making freshly cooked food easier and faster to prepare and clean up after, so I am less inclined to purchase more expensive pre-packaged items.
A very wise, older female friend told me once that when it comes to your home where you spend a lot of your time, it is prudent to view your home appliances like a tradesman views their tools. After careful research and consideration, purchase the best quality appliance you can afford, from a reputable company. Anything else is false economy, as you will be shelling out many times over for poorer quality, cheaper items that fail and break down. I have put this into practice throughout my life and find myself more than happy with my investment in my almost 10-year-old Vitamix - and more than happy to recommend it to others.

Brilliant!
Only had my vitamix for a couple of weeks, and am already looking for reasons to use it. It has made my life in the kitchen so much easier.
Whipped up this cheese sauce as a last minute add on to vegetables, so glad I did!
It does make quite a lot, so next time I think I will half the recipe.
Also room to play around with flavours, adding spices, different cheeses, etc.

Amazing--no roux required
I had my doubts, but the flavor was great. It was a bit thick for my taste--I think half of the amount of flour would have been sufficient.

Creamy bechamel sauce
This sauce is SO tasty, but a little too thick for pouring?
I end up adding double the skim milk to pour over the bolognaise sauce in between the lasagne sheets.
The other thing is that when the sauce is placed on the top, it blackens quite quickly.

Great!
My family and I try to avoid wheat, so I tweaked this recipe to make it keto/gluten free. I added everything except the flour. At the last couple of minutes, I added about a tsp of arrow root powder to the sauce. It was an amazing texture and my whole family loved it!
