Orange Chocolate Nut Cake
A crust of almonds, dates, and coconut oil is the foundation of this cold cake, which is complete with a chocolatey orange filling.
Nut Cake Crust
Ingredients
- 140 g (1 cup) raw almonds
- 80 g (½ cup) Medjool dates, pitted
- 3 Tablespoons coconut oil, softened
Directions
- Place almonds, dates and coconut oil into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 1 minute, using the tamper to press ingredients into the blades.
- Scoop mixture onto a 20-cm (8-inch) spring form pan, or push pan. Press the mixture into the sides and bottom of pan.
- Place in freezer to set.
Orange Chocolate Cake Filling
Ingredients
- 375 g (3 cups) cashews, soaked 3 hours, rinsed, drained
- 180 ml (¾ cup) orange juice
- 160 ml (⅔ cup) agave nectar
- 25 g (¼ cup) unsweetened cocoa powder
- 3 g (1 teaspoon) salt, optional
- 1 teaspoon orange extract
- 165 g (¾ cup) coconut oil, softened
- 40 g (¼ cup) dark chocolate, grated, for garnish
Directions
- Place cashews, juice, agave, cocoa powder, salt, extract and coconut oil into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 1 minute, until the mixture has the consistency of a thick pudding.
