Peach, Matcha Green Tea and Blueberry Ice Lolly
A refreshing balance of fresh peaches and blueberries, with the added health benefits of matcha green tea powder.
Ingredients
- 250 g (2 cups) peaches
- 290 g (2 cups) blueberries
- 60 ml (¼ cup) water
- 50 g (¼ cup) caster sugar, or Date Syrup to taste
- 240 ml (1 cup) plain nonfat Greek yoghurt
- 2 Tablespoons honey, or other sweetener, to taste
- ¼ teaspoon matcha green tea powder
Directions
- Cook peaches over medium heat for about 5 minutes, or until softened.
- Place peaches into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds. Transfer to a bowl and allow to cool.
- Combine blueberries, water, and sugar in a small saucepan and cook over medium heat for about 5 minutes.
- Place blueberry mixture into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds. Transfer to a separate bowl and allow to cool.
- Add yoghurt, honey and matcha powder into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds.
- To assemble lollies: Divide peach puree evenly into mold. Layer the matcha mixture on top of the peach. Layer the blueberry mixture on top of the matcha. Place lolly sticks in the centre of each mold and freeze.
Notes
If you do not have ice lolly molds, you can use small, disposable cups.

Nice low carb treat
You can definitely substitute with sugar free sweetener, but it is sweet enough without added sweetener/honey! Great low carb treat.
