Potato and Spinach Soup


  • 480 ml (2 cups) vegetable stock
  • 2 Tablespoons full cream milk
  • 2 Tablespoons double cream
  • 415 g (3 ) medium russet potatoes, baked, halved, cooled, divided use
  • 30 g (¼ cup) medium onion, peeled. diced
  • ½ teaspoon dried rosemary
  • 1½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 30 g (1 ounce) frozen spinach


  1. Place the stock, milk, cream, potatoes, onion, rosemary, salt and pepper into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 1.
  3. Turn the machine on and slowly increase the speed to Variable 10, then to High.
  4. Blend for 5 minutes or until heavy steam escapes from the vented lid.
  5. Reduce speed to Variable 5 and remove the lid plug. Add spinach through the lid plug opening and blend an additional 25 seconds.
