Thai Ginger Soup with Cashews
Ginger and chilli lend a zesty flavour to this soup, while cashews give it a hearty creaminess.
Ingredients
- 480 ml (2 cups) water
- 100 g (1 ) carrot, halved
- 100 g (1 cup) cabbage, chopped
- 100 g (1 ) celery stalk, halved
- 140 g (1 ) red pepper
- 150 g (1 ) courgette, cubed
- 10 g (1 ) spring onion
- 15 g (1 ) lime
- ½ garlic clove
- 1 Tablespoon fresh ginger root
- 1 red chilli pepper
- 125 g (1 cup) cashews
- 1 Tablespoon fresh coriander leaves
- 1 teaspoon honey, optional
- 1 vegetable bouillon cube
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 5 minutes 45 seconds or until heavy steam escapes from the vented lid. Serve immediately.
Notes
Add 1/2 cup (120ml) of coconut milk at the end of the blending cycle to give the soup a richer flavor. If you do not like spicy food, you may leave the chili pepper out of the soup.

Agree with what someone else said instructions here are terrible! In the recipe book we got with out vitamix we had quantities so thought I would add for others
500ml water
1 carrot 100g
1 slice cabbage 100g
1 stick celery 100g
1 slice bell pepper 20g
1 piece courgette 50g
1 spring onion 10g (halved)
1 slice lemon 25g unpeeled (it doesn't say it but I'm assuming unwaxed)
1/2 garlic clove
1 piece fresh ginger root 10g unpeeled
1 slice chilli 5g
Cashews 100g
Fresh coriander 10g
5ml honey
1 vegetable stock cube

Nice flavors. Lousy instructions.
Please define "a slice of pepper", "slice of cabbage" etc. I get the concept that there might be flexibility in the ingredient list, but this is strange. Watched a video with more specifics. Still turned out a bit water-y. I added more cashews and pureed a bit longer. The end result was quite good. Used a whole carrot, 4 inch hunk of zucchini, 1/4 of a pepper and a big handful of cabbage. New to the Vitamix and experimenting.

I saw this recipe being made at a demonstration and tried to recreate at home. The result was awesome. The cashews make this so creamy and you can put more or less ginger and garlic in it depending on how spicy you like it. The recipe says it takes 15 minutes but I was done in under 10.

Delicious and creamy
Bought myself a Vitamix as a Christmas present after wanting one for two years, having seen demos at the Good Food Show. Made this recipe as it was one shown at the demo, that was so tasty! Very easy to make. After reading other reviews I varied the quantities slightly, using 1/2 a courgette and 1/2 a pepper, a 1cm slice of onion instead of a spring onion, omitted the celery as I didn't have any, used 2 slices of lemon (not peeled) and 1tsp dried coriander leaf, instead of 1tbsp fresh. I did need to add a little more water at the end, as with these extra quantities it was just a bit too thick.

My Husband's Favorite Soup
While the directions leave some portions to your imagination, I have no trouble taking these ingredients and turning them into a tasty soup. Fun fact: I accidently used a jalapeno pepper instead of a chili pepper the first time. The second I used a chili pepper and my husband noted it was "missing that great bite" so I went back to the jalapeno and it does add a cool kick to the recipe. This is super easy and very satisfying.

This is a delicious soup. Nice if you like Asian flavours and very creamy thanks to the cashews. I added a little more chilli and garlic as I prefer extra spicy!

One of the tastiest soups from Vitamix
I tried it at the demonstration and was sold on the idea of Vitamix from that moment.
I keep using 1/2 red pepper, half of zucchini, 1 cm of a chilli pepper and the result is always amazing.
