Aged Balsamic Aioli
Like wine, fine leather, and cheddar cheese, some things only get better with age. Add balsamic vinegar to the list. This spin on traditional aioli provides plenty of flavor, making it a great dip for fresh veggies.
Ingredients
- 6 large pasteurized egg yolks
- 2 Tablespoons fresh lemon juice
- 10-12 small garlic cloves, roasted
- 2 Tablespoons Dijon-style mustard
- 60 ml (¼ cup) aged balsamic vinegar
- 1 teaspoon Winter Spice Seasoning
- 350 ml (1½ cup) light olive oil
Directions
- Place yolks, lemon juice, garlic, mustard, balsamic vinegar, and seasoning mix into the Vitamix container in the order listed and secure lid.
- Select Variable 1, start the machine, slowly increase speed to its highest speed, and blend for 30 seconds.
- Reduce speed to Variable 2, remove the lid plug, and slowly pour the oil through the lid plug opening. Secure lid plug.
- Slowly increase speed to its highest speed and blend for an additional 10 seconds.

I’m sure it would probably be better...
Unfortunately the ingredient list doesn’t match what’s in the directions. It talks about honey and salt in the directions but no where are those listed in the ingredients. And then the winter space is listed in the ingredients but it doesn’t say to add that to the ingredients in the directions. It doesn’t taste bad. However I’m wondering if it would’ve tasted betterIf I didn’t have the winter space in it. Actually, I’m sure it would’ve tasted better without that. I double my recipe she used a lot of eggs and oil

A keeper for Fall and Winter crudités dip
I made 1/2 recipe, which is still a lot, as just 2 of us. This adds so much to raw veggies, as well as grilled/ roasted. Recommend.
