Atole de Cajeta
This is a soul warming drink, perfect for the colder months, that is flavored by the goats milk caramel, and thickened with masa. If you cannot find Cajeta, substitute dulce de leche, or sweetened condensed milk.
Ingredients
- 1.2 l (5 cups) milk, room temperature
- 240 ml (1 cup) Cajeta
- 1 teaspoon ground cinnamon
- 50 g (⅓ cup) cornstarch
Directions
- Combine all of the ingredients in the order listed into the 64 ounce low profile container and secure the lid.
- Select the hot soup program and start the machine (or variable 1, start the machine, and quickly move up to variable 10, blend for 5:45.)
- Allow program to run to completion, then select variable 1. Start the machine. Blend for an additional 30 seconds to reduce foam.
- Serve hot with a sprinkle of ground cinnamon overtop.

Sounds good. I did not make this. Wanted to provide guidance since I am Hispanic and familiar with cajeta. You can purchase cajeta from Fat Toad Farm online or buy Coronado brand at Walmart.
VITAMIX STAFF: please correct the language in your description. “Dolce” is Italian and incorrect for this traditional Mexican recipe. The correct word is the Spanish “dulce”.
