Kale and Basil Pesto
This vibrant blend of kale and basil is perfect on any pasta.
- 240 ml (1 cup) olive oil
- 120 g (1 cup) grated Parmesan cheese
- 3 garlic cloves, peeled
- 80 g (2 cups) fresh basil leaves, chopped
- 60 g (2 cups) kale
- 3 Tablespoons pine nuts
- ¼ teaspoon salt
- ground black pepper, to taste
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Switch machine to Start and slowly increase speed to Variable 10.
- Blend for 40 seconds.

If basil is not plentiful this is a great alternative and I bet most would not even notice the kale (over just traditional basil). We used almonds when I found no pine nuts in the pantry-Again, did not taste a difference from traditional pesto. Delicious.We added tomatoes and rigatoni.

Rated 5 out of 5 by melissasue21 from Love it! We had extra kale and basil in the garden and when searching for recipes I stumbled across this one. Although my garlic was a little strong (next time I will use 2 cloves) the whole family gobbled this up!! Great on pasta and for a crudite dip.
