Key Lime Ice Cream
If you love limes, you’ll love this silky frozen treat. Part tangy, part creamy, entirely delicious.
Ingredients
- 120 ml (4 ounces) vanilla non-dairy creamer
- ½ avocado, pitted, peeled
- 2 limes, peeled, seeded and halved
- 30 ml (2 Tablespoons) agave nectar, optional
- 30 g (1 cup) spinach
- 390 g (3 cups) ice cubes
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 1 or the Frozen Desserts program (if available).
- Start the machine, slowly increase to its highest speed, and blend for 50 seconds; or start the machine and allow the Frozen Desserts program to complete, using the tamper to press the ingredients into the blades.

Needed help
I made this using my new perfect blend scale and Venturist model. The perfect blend did not work perfect for me so guess I need to look for more instructional videos. The spinach stuck to the sides of the blender container and I could still taste pieces in the finished ice cream. When I was done the ice cream was too icy so I put on again and the motor overheated and shut off. I had to add more creamer and put it on longer to get it creamy. I think it would have been better to add the avocado and spinach and cream and blend it first then gradually add the ice. The flavor was pleasant when it was finally done, thus four stars.

Great recipe!
I substituted the non-dairy creamer with milk and vanilla extract, and the agave nectar with stevia, for a version that had little to no sugar and tasted every bit as delicious.

Very tasty
We sampled the key lime ice cream at Costco and then wanted to try it at home. We used honey instead of agave (because that’s what we had) and I added a bit more honey (1/4c). I would recommend being patient blending it. You have to blend it a ton! We put our Vitamix on high for 30 sec and then pushed the ice cream down and did it again several times. It came out just as smooth and creamy as at Costco. I think the key is blending it longer than what the person at Costco did.

I made this for my teenage son and didn't tell him it had avocado and spinach and he loved it! I substituted almond milk vanilla creamer for the and it was wonderful!

We LOVED it
The kids and I loved it - we ate it all up. The only change I would do is to add more agave, so it's sweeter. But it was delicious!

Too bitter!
This recipe has potential I think I just didn't peel the limes enough because all I really tasted was the pith (the white part just under the peel, which by the way is very healthy). The next time I'll peel the limes better. I'll leave another review when I make this recipe again.

Disappointed
We tried this Key Lime Ice Cream during a demonstration at Costco today and were very impressed by its texture and subtle flavor.
Because I didn't get to see the process of making it I asked about the recipe and the Vitamix lady told me to follow a recipe in the application, which I did.
The recipe in the app unlike this recipe says that half of a lime should be blended unpeeled. The ice cream came out very bitter, even though I added more of Agave Nectar. But I guess this is something that can be avoided next time by peeling all limes.
Why such differences in the same recipe?
However, what disappointed me most was that the blender had difficulties with blending well all the ingredients. As soon as the blades crashed the ice cubes it appeared that the motor is working and blades are rotating ( I believe) but nothing was happening, it looked like the blades were blanding just an air because the ingredients stopped moving in the jar even though I was changing the speed and using the tamper. When I added extra Agave nectar at the end the blender fail to mixed it in so basically I just had to mixed it manually with the tamper. The blender couldn't manage the thickness and texture, which surprises me a lot because my ice cream was not even close in thickness as the one served at Costco which were not poured but scooped with an ice cream spoon.
In addition, our ice cream had some hard pieces of lime that didn't get liquify.
I started questioning my blender condition - we purchased it very recently.
