Pomegranate BBQ Sauce
This sauce is irresistible on any protein from shrimp to ribs. Pomegranate is loaded with antioxidants and works well with the sweet and spice of smoky adobo and raisins.
- 480 ml (2 cups) pomegranate juice
- 1 chipotle in adobo sauce, seeded, diced
- 2 teaspoons pimento
- 225 ml (1 cup) tomato ketchup
- 1 Tablespoon Dijon-style mustard
- 1 Tablespoon soya sauce
- 2 limes, peeled, seeded and halved
- 200 g (1¼ cup) raisins
- 165 g (¾ cup) light brown sugar
- ½ teaspoon salt, optional
- 1 teaspoon ground cinnamon
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1 or the Puree program. Start the machine, slowly increase to its highest speed, and blend for 45 seconds; or start the machine and allow the Puree program to complete.
