Buttermilk Pancakes
Top these fluffy, whole-grain pancakes with a fresh fruit syrup, also made in your Vitamix.
Ingredients
- 480 ml (2 cups) low fat buttermilk
- 2 large eggs
- 60 ml (¼ cup) olive oil, optional
- ½ teaspoon salt, optional
- 50 g (¼ cup) caster sugar, or Date Syrup to taste
- 125 g (1 cup) plain flour
- 120 g (1 cup) whole wheat flour
- ½ teaspoon bicarbonate of soda
- 2¼ teaspoon baking powder
Directions
- Place buttermilk, eggs, oil, salt, and sugar into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 5 or 6.
- Blend for 5 seconds and remove lid plug.
- Add flour, baking soda, and baking powder through the lid plug opening.
- Replace lid plug and blend for an additional 20 to 25 seconds, using the tamper until mixture is combined.
- Pour 30-60 ml (1/4 cup) batter onto hot, prepared griddle and bake.
Chef's Notes
For recipe variation, use 190 g of wheat berries instead of the flour. Grind berries in Dry Grains Container for 1 minute on High prior to using in recipe.

Excellent flavor, fluffy and moist
I made this for dinner tonight, looking for something quick and simple, and it turned out so good. I am always trying new pancake recipes, looking for the one that is just right, with good flavor and texture and more than just a carrier for jam or syrup. Don't think I'll bother to try any other recipes after this, and I'll always be doing it in the blender, the batter was so smooth, I think the blending must have had something to do with the resulting texture. I should mention I used one cup of buttermilk, one cup of sour cream, as I only had the one cup of buttermilk, but I don't know that it would make a difference.

The only thing iam gonna do next time :) Leave out the sugar...
it was too sweet for us :)

Substitute butter for olive oil
Great recipe, but use butter for the olive oil and always add vanilla to pancake batter - about 1 tsp. I also would use less buttermilk -- about 1/4 cup less so that the pancake batter is thick. Love using the vitamix for mixing pancake batter!

Very light, fluffy and moist
I loved it, I use this recipe for breakfast all the time now. It makes really good pancakes but I was able to substitute the oil for butter and just used one kind of flour. The sugar makes it a little too sweet so if you want to use maple syrup than don't add the sugar. Overall, great recipe.

Easy clean up and no bumps
Tried this morning for week’s meal prep. Added frozen blueberries to recipe. My vitamix continues to WoW me! Usually I whisk my pancake mix and on most accounts find a dry dollup after through. Not this time, nor a tired wrist. 20 seconds max and it was smooth and creamy. I used 3 cups of mix so I pulled out the 64oz jar. I have 2 sizes and routinely us the 32oz jar for foaming 2% milk for coffee or Lattes.
Clean up was a breeze too. We are loving kitchen times so much more since the 750 came!

Recipe I've been looking for !
I have never been able to find the perfect recipe but this is it! The only thing I changed, was I used Agave Syrup in place of sugar because I was out.

I loved the recipe! And not having to get my mixer
This is the first time I’ve used as a mixer, I followed directions and it came out awesome! I learned you don’t have to mix very long. Could I make it with half almond flour? (For keto?)
