Chestnut Ice Cream

Roasted chestnuts evoke feelings of the holiday season, and this ice cream is a cool twist on traditional flavors.



  • 150 g (1 cup) roasted chestnuts
  • 240 g (1 ½ cups) reduced-fat vanilla yoghurt
  • 70 g (10 ) dates, pitted
  • 520 g (4 cups) ice cubes


  1. Place chestnuts, yogurt and dates into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 1.
  3. Turn machine on slowly increase to the highest speed.
  4. Blend for 30 seconds creating a very smooth base. Stop machine.
  5. Add ice and secure the lid.
  6. Select Variable 1.
  7. Turn machine on and slowly increase speed to the highest setting.
  8. Blend for 20 seconds using the tamper to push ingredient into the blades.
  9. Serve immediately

Chef's Notes

You can put all ingredients into the blender at one time just like our traditional recipes, but by blending the base first you are assured of a very smooth texture with no small pieces.
