Coconut Rum Café
Imagine blending a piña colada with your favorite iced coffee--the result is the Coconut Rum Café.
- 15 ml (½ ounce) rum
- 80 ml (⅓ cup) cream of coconut
- 50 g (⅓ cup) pineapple
- 80 ml (⅓ cup) coffee
- 195 g (1½ cup) ice cubes
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 30 seconds or until desired consistency is reached.
This drink can be made without alcohol.

Rated 1 out of 5 by al_pala from Not what I thought A true piña colada is actually quite sweet - this recipe is NOT, and the addition of the coffee makes it quite bitter actually. If you’re going for a caffeine fix with a true piña colada, I’d more likely start with the actual drink recipe and blend in frozen coffee cubes instead of ice.
