Gluten-Free Date Nut Bars
Dates and orange lend a fruity flavor to these bars, while walnuts provide a little crunch.
Ingredients
- 115 g (1 cup) chopped walnuts
- 110 g (¾ cup) dates, pitted, chopped
- Zest of 1 orange
- 3 large eggs, or egg substitute
- 100 g (½ cup) caster sugar
- 60 ml (¼ cup) orange juice
- ½ teaspoon ground cinnamon
Directions
- Heat the oven to 350°F. Grease an 8 inch square baking pan.
- Place walnuts in the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4.
- Blend for 10 seconds. Remove to a bowl and stir in the dates and orange zest.
- Place eggs, sugar, orange juice and cinnamon into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then High.
- Blend for 15 seconds.
- Add the mixture to the bowl with the walnuts and dates and stir to combine.
- Pour mixture into prepared pan and bake for 30 minutes.
- Allow to cool thoroughly before slicing.
