Ham and Egg Quiche
A shareable morning meal, complete with fresh veggies and diced ham.
Dough
Ingredients
- 55 g (¼ cup) butter, softened
- 70 g (⅓ cup) 2% cottage cheese
- 1 large egg
- 200 g (1½ cup) spelt flour
- 1 teaspoon baking powder
- 1 teaspoon cream of tartar
- ⅛ teaspoon salt
Directions
- Place butter, cottage cheese and egg into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 15 seconds.
- Combine flour, baking powder, cream of tartar and salt in a bowl.
- Place half of the flour mix into the Vitamix container and secure lid.
- Select Variable 5. Turn machine on and off to pulse 5 to 7 times to incorporate. Stop and scrape the sides of the container. Add the rest of the flour to the container and repeat the process, using tamper to press the ingredients into the blades.
- Remove the dough, place in saran wrap and wrap tightly. Place in refrigerator for about an hour. Pull and press into a 9 inch pie pan.
Quiche
Ingredients
- 60 ml (¼ cup) full cream milk
- 8 large eggs
- 1 red pepper, stemmed, seeded, julienned
- 60 g (½ small) small onion, peeled
- 2 garlic cloves, peeled
- 30 ml (2 Tablespoons) extra virgin olive oil, optional
- 1 dash chilli paste
- 300 g (10 ounces) ham, diced
Directions
- Place milk, eggs, pepper, onion, garlic, olive oil and chilli paste into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 5.
- Blend for 20 seconds.
- Place diced ham into the prepared quiche dough in the pan. Pour the egg mixture over top.
- Place in 190°C (375°F) oven until cooked through, about 45 minutes to one hour.
Notes
This is a great do ahead breakfast/brunch item. Bake off the night before and just reheat the next day.
