Jalapeño Garlic Vinaigrette
Add a little heat to a cool salad with this spicy dressing.
Ingredients
- 60 ml (¼ cup) apple cider vinegar
- 5 garlic cloves, peeled
- 1 Tablespoon pickled jalapeño peppers, in juice
- 1 Tablespoon Dijon mustard
- ¼ teaspoon salt, optional
- ¼ teaspoon hot sauce, tabasco preferred
- ¼ teaspoon Worcestershire sauce
- 1 teaspoon caster sugar
- 1 shallot, peeled (about 80g)
- 120 ml (½ cup) olive oil
Directions
- Place vinegar, garlic, jalapeños with juice, mustard, salt, hot sauce, Worcestershire sauce, sugar and shallot into the Vitamix container in the order listed and secure lid.
- Blend an additional 10 seconds.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 15 seconds or until ingredients are well blended, using the tamper to press the ingredients into the blades.
- Stop and scrape sides. Secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4.
- Remove lid plug and slowly add oil in a thin stream through the lid plug opening.
- Replace lid plug and slowly increase speed to Variable 10, then to High.
