Minestrone Soup
With any combination of leafy greens, vegetables and beans, this beloved Italian favourite can be thrown together with whatever's in your pantry. Ours includes corn, courgette, carrot, garbanzo beans and kidney beans.
Ingredients
- 240 ml (1 cup) chicken stock
- 2 Roma tomatoes, quartered
- ½ garlic clove, peeled
- 1 baby carrot
- 30 g (¼ cup) onion, peeled. diced
- ½ stalk celery, diced
- ⅛ teaspoon ground black pepper
- ⅛ teaspoon dried oregano
- ⅛ teaspoon dried basil
- ¼ teaspoon salt
- 1 Tablespoon tomato purée
- 60 g (¼ cup) tinned garbanzo beans, rinsed, drained
- 65 g (½ cup) courgette, cubed, steamed
- 130 g (½ cup) kidney beans, drained
- 30 g (¼ cup) corn
- 25 g (¼ cup) grated Romano cheese
Directions
- Place the broth, tomatoes, garlic, carrot, onion, celery, pepper, oregano, basil, salt, and tomato paste into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 6-7 minutes or until heavy steam escapes from the vented lid.
- Reduce speed to Variable 1 and remove the lid plug.
- Add chickpeas, zucchini, kidney beans, corn and cheese through the lid plug opening. Replace the lid plug.
- Blend for 1-5 seconds, or until desired texture is reached.

LOVE this soup!
This has become one of my favorite soups to make in my Vitamix. The recipe is fast, easy and satisfying with lots of texture from the fresh vegetables. Perfect for lunch or a light supper!

OMG Amazing! 1st successful soup made with my Vita
I boiled the pieces of carrot in a pot to soften and I boiled the beans to soften then drained them to add to the soup and also added pieces of cucumber. Next time I won't pulse those veggies and just leave them whole. But still it was delicious and I added some seasoned garlic salt and a little bit more basil and oregano and salt and I had doubled the recipe. I have soup now for all week! Delicious Flavor. And used all organic veggies and low sodium chicken broth. so healthy for my diet to aid in weight loss!

Yummy
We've just made this for the first time. Super yummy, in the last step we pulsed for 3 seconds, but next time, we'll do it for 1 so the veggies are still abit bigger and crunchier! We didnt prep all the veggies according to the list we just threw everything in and let he vitamix do it's work. Super impressed by this one!

Tasted amazing
When I bought the new vitamix my father said you don't need that for $500! Return it.. I made this soup for him today and asked him if I should still return it and he quickly said no! Also couldn't get it down fast enough. Everyone loved it!!!

Not what I was hoping for
It ended up tasting more like a tomato soup. Needed more spices and less tomato. I've made minstrone completely from scratch in a pot, and this was *definitely* more of a fancy tomato than a minestrone.

Tasty Soup
The third soup I tried in the Vitamix. Very tasty..used more beans as I did not have corn so next time will make it with corn and zucchini. Lovely consistency.
