Pumpkin Brownies
Brighten the flavour of these brownies with more spice, fresh ginger, or orange zest and top with icing sugar or your favourite frosting.
Ingredients
- 120 ml (½ cup) egg substitute, or 4 eggs
- 150 g (15 ) Medjool dates, pitted
- 240 ml (1 cup) applesauce
- 405 g (1¾ cup) pumpkin purée
- 240 g (2 cups) whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt, optional
- 2 teaspoons pumpkin spice
Directions
- Place eggs, dates, applesauce and pumpkin into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 1 minute using tamper if needed.
- Pour mixture into stainless bowl and mix in dry ingredients.
- Transfer mixture to a greased 25 cm x 38 cm (10-inch X 15-inch) non-stick cake pan
- Bake brownies for 30 minutes in a 180°C (350°F) oven, until a toothpick inserted comes out clean.
- To serve cut brownies and sprinkle with powdered sugar if desired.
Notes
Flax eggs work great as an egg replacer. To make a flax "egg," simply combine your flax meal (1 Tbsp. flax to 3 Tbsp. water) with water in a small container and stir to combine, and allow it to sit for 5 minutes before using.

No Guilt here!
I love the ingredients in this recipe. I skipped a step by using whole apple added directly into the Vitamix rather than apple sauce. These turned out nice and moist. They are not very sweet, so you might want to frost them or serve with ice cream. I baked them in a 9X13 pan.

Great way to cut sugar, up your fiber & vitamin A
This certainly has potential for a tasty dessert if you're needing to lower your sugar intake. Works as a breakfast pastry as well. The dates, pumpkin and whole wheat flour sneak in some fiber and beta carotene into your diet. Note, I used regular applesauce, a 50/50 split of whole and all-purpose flours, threw in about 150 g of semi-sweet chocolate and Reese's peanut butter chips along with a 1/2 teaspoon of ground ginger. The chips helped add texture (and flavor), as would pecans and/or walnuts. For those who haven't used pumpkin in baking, just FYI, end products tend to have a spongy texture. This may turn some of the super-sensitive off, but is absolutely fine by measure. Also, this is NOT a 100% Vitamix recipe, as you will need a stand or hand mixer to "mix" the wet and dry ingredients.

Wonderful, healthy treat!
It's quick and makes enough for my yoga class. Threw in some walnuts (got to have them in brownies) and "frosted" them with a chocolate humus. Delicious!

Loved it with chocolate chips
Everyone loved this recipe. I also used a sliced whole apple instead of apple sauce and tossed in some chocolate chips. Very easy recipe! Next time, I am going to skip the chocolate chips and add chocolate powder to keep the sugar low.

Delicious, Healthy and Easy!
I'm hooked on this recipe as it's easy, healthy and delicious. I added frozen cranberries to the batter in my last batch which turned out great and matched well with the pumpkin and fall spices. A dusting of powdered sugar is all that's needed.
