Pumpkin Soup

The warm sweetness of paprika and nutmeg combine with the savoury seasonings of onion, garlic, and cayenne pepper to create this decadent, full-bodied purée.

Pumpkin Soup


  • 240 ml (1 cup) chicken stock
  • 60 ml (¼ cup) unsweetened coconut milk
  • 370 g (1½ cup) pumpkin purée
  • 60 g (½ cup) onions, sautéed
  • 1½ roasted cloves, peeled
  • 4½ teaspoon light brown sugar
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon ground nutmeg
  • salt and pepper, to taste


  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 6-7 minutes or until heavy steam escapes from vented lid.


Garnish with toasted pumpkin seeds. Substitute vegetable stock for a vegetarian option.
