Shortbread Cookies
It isn’t a gathering without the ever-popular shortbread cookie—an easy-to-make recipe using your Vitamix.
Ingredients
- 110 g (½ cup) butter, softened
- 1 large egg
- 100 g (½ cup) caster sugar
- 60 g (½ cup) plain flour
- 60 g (½ cup) whole wheat flour
Directions
- Heat the oven to 190° C (375°F).
- Place butter, egg, and sugar into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase to the highest speed.
- Blend for 15 seconds until mixture is smooth and creamy.
- Remove the lid and add the flour to the container.
- Select Variable 6.
- Turn the machine on and off quickly to pulse 12 to 15 times, using the tamper to press the ingredients into the blades.
- Remove the dough from the container, wrap in plastic wrap and chill for 1 hour.
- Remove from refrigerator and cut dough into two pieces. Dust each piece with flour and roll into 2.5 cm (1-inch) thick sheets.
- Cut cookies with a 4 cm (1½-inch) cookie cutter and place on a baking tray lined with parchment paper.
- Bake for 8 to 10 minutes, until cookies are set but not browned.
Notes
This recipe is a wet dough and needs to be chilled. Don't be afraid to use a liberal amount of flour when rolling the dough out.

Desperately Needs Proofreading
Please proofread this recipe. Claims to make 5 dozen, 1.5" x 1.5" cookies, dough rolled 1" thick. That will never happen with this small recipe (ratio 1/2 c. butter to 1 c. flour). Formed for refrigeration, dough formed 1" tall rectangle approx. 4.5" x 7". My own recipe makes 4 dozen (fewer), 1.5" x 1" cookies (smaller), and that's with dough rolled 1/4" (much thinner) with a (much larger) recipe using 1.5 c butter to 4 cups flour.

Great Christmas Gift
This recipe is easy. Shortbread cookies are my favorite. This recipe produces a slightly more moist cookie than a typical shortbread cookie.Over the past several years I have given these as gifts for the holidays. Neighbors have loved these. They pair well with eggnog, cider, hot cocoa, coffee or chai tea. My favorite shortbread recipe!
