Snowballs
Icing sugar coats these light and airy cookies, which are just as fun to form as real snowballs.
Ingredients
- 85 g (¾ cup) chopped nuts
- 280 g (2¼ cup) plain flour, divided use
- 175 g (1 cup) margarine
- 1 teaspoon vanilla essence
- ¼ teaspoon salt, optional
- 60 g (½ cup) icing sugar

Directions
- Heat the oven to 190 °C (375°F).
- Place nuts into the Vitamix container and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 4.
- Blend for 10 seconds. Remove to a bowl.
- Place half the flour, half the margarine, vanilla, salt, icing sugar, remaining margarine, and remaining flour into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 5.
- Blend for 10 to 15 seconds, using the tamper to press the ingredients into the blades.
- Transfer to the bowl with the nuts and stir to incorporate.
- Shape the dough into 2.5 cm (1 inch) balls and place about 2.5 cm (1 inch) apart on an ungreased baking tray.
- Bake 10 to 12 minutes until set but not brown. Remove to cool for 10 minutes.
- Roll the warm cookies in sifted icing sugar and cool on a wire rack.
