Thai Ginger Soup with Cashews

Ginger and chilli lend a zesty flavour to this soup, while cashews give it a hearty creaminess.

Ingredients

  • 500 ml (2 cups) water
  • 100 g (1 ) carrot, halved
  • 100 g (1 slice) cabbage
  • 100 g (1 stalk) celery, diced
  • 20 g (1 slice) red pepper
  • 50 g (1 )
  • 10 g (1 ) onion, halved
  • 25 g (1 ) lemon, unpeeled
  • ½ garlic clove
  • 10 g (1 ) fresh ginger root, unpeeled
  • 5 g (1 ) red chilli
  • 100 g (1 cup) raw cashews
  • 10 grams coriander
  • 5 milliliters honey
  • 1 vegetable bouillon cube

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 5 minutes or until heavy steam escapes from the vented lid.
  5. Serve immediately.
