Chocolate “Figgy” Pudding
A modern take on the dessert that dates back to 16th century England, this chilled treat is the perfect ending to a holiday meal. Prepare this recipe in advance so you can enjoy more quality time with your guests.
Ingredients
- 180 ml (¾ cup) milk, lukewarm
- 480 ml (2 cups) double cream, lukewarm
- 50 g (¼ cup) caster sugar
- 240 ml (1 cup) milk chocolate chips
- ½ teaspoon Winter Spice Seasoning
- 1¼ teaspoon powdered gelatin
- 190 ml (⅔ cup) Fig Jam
- pistachios, lightly toasted and chopped
Directions
- Add all ingredients into the Vitamix container in the order listed and secure the lid.
- Select Variable 1 or the Hot Soup program (if available). Start the machine, slowly increase to its highest speed, and blend for 5 minutes 45 seconds; or start the machine and allow the Hot Soup program to complete. Stop the machine.
- Portion equally into 8-ounce ramekins and place in the refrigerator for 3 to 4 hours until set. Top with fig jam and garnish with chopped toasted pistachios.
