Gluten-Free Bean Flour
An alternative flour for gluten-free cooking made from ground dried legumes.
- 290 g (2 cups) dry garbanzo beans
- 200 g (2 cups) tapioca starch
- 240 g (2 cups) cornstarch
- Place dry garbanzo beans into the Vitamix container and secure the lid.
- Select Variable 1.
- Start machine and increase to its highest possible speed.
- Blend for 45 seconds.
- Remove to a bowl and add tapioca starch and cornstarch.
- Stir with a whisk to incorporate. Store in an airtight container.
For best results, grind 400 g (2 cups) of grains at a time.

Rated 5 out of 5 by amylove from Glad to have options fresh at home! I read a few irritated reviews here, but this is an amazing feature! Instead of heading to a "specialty" store, I get to blend and test various things at home. You can't/shouldn't substitute willy-nilly in recipes; there's some chemistry to understand there. But you don't "need" a professional gluten free chef. I mean, how many products in the shelves at stores, created by pros, are over-priced tasteless disappointments? However, the internet is FULL of recipes and suggested substitutions (ahem - such as where beans flours are concerned.) I've had some flops, and some amazing results. Black bean brownies are a hit in our house. That is, after several attempts to get it right :)

Rated 1 out of 5 by Eileen 33 from gluten free baking experience needed You may think you can take a bread recipe and change the flour to gluten free and that is all there is to it. WRONG!!! I have been cooking and baking for about 7 years. That just does not work. Do not think that living gluten free is easy. I have had more flops learning to bake gluten free. Find and employ a person who is an experienced gluten free baker. We need good recipes.
