Kale and Leek Soup

This boldly flavoured soup offers tremendous texture, since half the recipe is blended in your Vitamix, while the other half simmers on the stove.

Kale and Leek Soup


  • 270 g (3 ) leeks, washed well, sliced
  • 1 Tablespoon extra virgin olive oil, optional
  • 150 g (5 cups) kale, stemmed, chopped
  • 1.4 l (6 cups) vegetable stock
  • 1½ teaspoon Maldon salt, optional
  • ¾ teaspoon ground black pepper


  1. Sauté leek in olive oil until soft. Add kale and cook until wilted.
  2. Add stock and cook for 30 minutes on low heat and let cool for 10-15 minutes or until temperature reaches 65°C (120°F).
  3. Place soup into the Vitamix container and secure lid.
  4. Select Variable 1.
  5. Turn machine on and slowly increase speed to Variable 10, then to High.
  6. Blend for 45 seconds until smooth.
  7. Pour mixture back into pot and heat for 10 minutes, or just until it begins to simmer. Season to taste with salt and pepper.

Chef's Notes

Try a dollop of our Cashew Sour Cream Sauce with some toasted pepitas or pine nuts to garnish this soup.
