Minestrone Soup
With any combination of leafy greens, vegetables and beans, this beloved Italian favourite can be thrown together with whatever's in your pantry. Ours includes corn, courgette, carrot, garbanzo beans and kidney beans.
Soup Base
Ingredients
- 480 ml (2 cups) vegetable stock
- 240 g (4 ) Roma tomato
- 1 garlic clove, peeled
- 40 g (½ ) carrot
- 80 g (½ ) medium onion, peeled
- 50 g (½ ) celery stalk
- ¼ teaspoon dried basil
- ¼ teaspoon dried oregano
- 2 Tablespoons tomato purée
Directions
- Place all Soup Base ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 5 minutes 45 seconds or until heavy steam escapes from vented lid.
All-In Ingredients

- 120 g (½ cup) garbanzo beans, drained
- 100 g (½ ) courgette
- 260 g (1 cup) kidney beans, drains
- 100 g (½ cup) corn kernels
- 50g (½ cup) Pecorino Romano cheese, grated
- salt and pepper, to taste
Directions
- Reduce speed to Variable 2 and remove lid plug. Add chickpeas, zucchini, kidney beans, corn, and cheese through the opening. Secure lid plug. Blend for an additional 10 seconds. Serve immediately.

OMG Amazing! 1st successful soup made with my Vita
I boiled the pieces of carrot in a pot to soften and I boiled the beans to soften then drained them to add to the soup and also added pieces of cucumber. Next time I won't pulse those veggies and just leave them whole. But still it was delicious and I added some seasoned garlic salt and a little bit more basil and oregano and salt and I had doubled the recipe. I have soup now for all week! Delicious Flavor. And used all organic veggies and low sodium chicken broth. so healthy for my diet to aid in weight loss!

LOVE this soup!
This has become one of my favorite soups to make in my Vitamix. The recipe is fast, easy and satisfying with lots of texture from the fresh vegetables. Perfect for lunch or a light supper!

Tasted amazing
When I bought the new vitamix my father said you don't need that for $500! Return it.. I made this soup for him today and asked him if I should still return it and he quickly said no! Also couldn't get it down fast enough. Everyone loved it!!!

Yummy
We've just made this for the first time. Super yummy, in the last step we pulsed for 3 seconds, but next time, we'll do it for 1 so the veggies are still abit bigger and crunchier! We didnt prep all the veggies according to the list we just threw everything in and let he vitamix do it's work. Super impressed by this one!

Not what I was hoping for
It ended up tasting more like a tomato soup. Needed more spices and less tomato. I've made minstrone completely from scratch in a pot, and this was *definitely* more of a fancy tomato than a minestrone.

Fantastic first run with unit, delicious!
For my first run, minestrone soup was selected as fresh summer tomatoes were on the vine. Used green onion, Better than Bouillon organic chicken, kidney beans, par boiled zucchini in 1/8 c water to utilize as well along with two fist-fulls of power greens. Excellent flavor, great texture, and fun to process and create. Mmm’

Tasty Soup
The third soup I tried in the Vitamix. Very tasty..used more beans as I did not have corn so next time will make it with corn and zucchini. Lovely consistency.

Not a favorite
We just got our Vitamix and were excited to try the heating feature. I'm not sure about anyone else but having it run at full speed for over 2 minutes is stressful. It's so loud and it just feels unnecessary if you have a stove. I followed the recipe to a T and it was just not as good or anywhere near as good as the slow cooker minestrone I usually make. I ended up putting it in a pot and doctoring it up on the stove to try to salvage it for dinner.
