This Asian style tartar sauce has a bit of sweetness balance the sour of the pickles.
- 400 g (2½ cup) not silken soft tofu
- 80 ml (⅓ cup) fresh lemon juice
- 75 g (⅓ cup) rock sugar
- 1 hard-boiled egg, diced
- 4 pickle spears, or 20 cornichons diced
- Place the tofu, lemon juice and sugar into the Vitamix container in the order listedand secure the lid. Select Variable 1, start the machine and increase to its highestspeed. Blend for 30 seconds.
- Pour mixture into a bowl and fold in hard-boiled egg and pickles.
