Vietnamese Noodle Bowl
This recipe is so easy to execute that it will become a go-to weeknight dinner in your home. It also makes a perfect on-the-go lunch!
Vietnamese Noodle Bowl
Ingredients
- 1 package rice noodles
- 45 ml (¼ cup) lime juice
- 2 Tablespoons fish sauce
- 1 Tablespoon caster sugar
- 2 Tablespoons roasted peanuts
- 1 Thai Chili
- 2 Tablespoons vegetable oil
- 2 spring onions, cut into pieces
- 3 garlic cloves, peeled
Directions
- Cook rice noodles according to package instructions. Strain and let cool.
- Place remaining ingredients into the Vitamix container in the order listed and secure the blade base.
- Select Variable 1, start the machine, and slowly increase to its highest speed. Blend for 10 seconds.
- Pour blended vinaigrette over noodles and toss to coat.
Garnish
Ingredients
- 200 g (1½ cup) turkey breast, chopped and cooked
- ¼ head Napa cabbage
- 2 carrots, shredded
- 15 g (½ cup) fresh mint leaves
- 30 g (1½ cup) bean sprouts
Directions
- Garnish the noodle bowl with remaining ingredients and serve.

Better than the Restaurant chains
Have you ever had a Noodle Bowl? This is not supposed to be a soup. I love the sauce. The fish sauce can be found in small bottles in most grocery stores and is a must for excellent flavor. I add a bit of cilantro and chopped peanuts on top. Thin it out if you like but I like the thickness to stick to the noodles, not the bottom of the bowl.

I can't really imagine eating this with just a bit of vinaigrette, it looks like it needs some kind of broth?
