Winter Spice Seasoning
This versatile spice blend will have you feeling the warmth of the holidays in every dish.
Ingredients
- 3 cinnamon sticks
- 2 Tablespoons crystalised ginger
- ¾ teaspoon ground cardamom
- 3 Tablespoons salt
- 1 Tablespoon pink peppercorns
- 1½ teaspoon whole cloves
- 50 g (½ cup) dried orange peel
- 120 g (½ cup) light brown sugar, packed
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Start the machine, slowly increase to its highest speed.
- Blend for 30 seconds or until desired consistency is reached, using the tamper to push ingredients into the blades, if needed.
Chef's Notes
Mixed peppercorns can be substituted if unable to find pink peppercorns.

Love it! Hmm...What else can I do with it?
I really do love this unique spice mix! The gingersnap cookies are delicious and ginger/spicey, but without too much bite to them, if you know what I mean. This mix seemed kind of pricey to make, and pink peppercorns were a bit hard to find-World Market was the place, but it makes about 2 cups of spice. That's a lot for the money. Question: does Winter Spice need to be refrigerated? It makes so much, it seems like a good idea. Also, I put it in half pint jars, but wondering how do others store this?
Uses: I tried a 1/2 teaspoon mixed into oatmeal, yum! I'm going to try it in some herbal tea too. The other reviewer's comments were helpful and I look forward to trying this spice mix with all the things she mentioned.

Versatile
Good blend; spicy, warm, sweet, and salty. Very easy to customize to individual taste.
I had trouble with the mix packing up in the corners and beneath the blade. Perhaps my ginger or sugar were especially moist. If I make again, I will grind the other ingredients some before adding those.

Lots of uses
Elle, you can use in pumpkin soup, spiced nuts, on popcorn, sprinkle on acorn squash and bake. Great in caramel popcorn recipes for a twist.

What else can I use this for?!
This is very tasty but what else can I use it for? I only used a tsp in my soup recipe and have a lot leftover. What do I do with it?

Tastes good, can be used for many things
Has a good flavor, but recipe unclear about how many whole cloves to use. I ended up using 1 t ground cloves, but I think approximately 12 whole cloves would work well.
