Beet Tomato and Macadamia Nut Soup
This creamy beet soup is well rounded with a little acidity from tomatoes, smokiness from the cumin, and is ready for add-ins of your choosing.
Ingredients
- ¾ cup (180 ml) water
- 4 (240 g) Roma tomato
- 2 (180 g) beet, halved
- 1 Tablespoon olive oil, optional
- 1 teaspoon ground cumin
- ½ vegetable bouillon cube
- ¼ cup (60 g) macadamia nuts
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 7 minutes 30 seconds, or until heavy steam escapes from the lid plug opening
Notes
Try garnishing this soup with toasted, crushed macadamia nuts and fresh dill.

Perfect taste! Easy to make!
I purchased ready roasted beets, and this was a snap to make! Perfect taste. My only addition was to add a little pepper when I served. This will definitely become a staple in my family!

Delicious ! Tastes like it came from a chef's home
Wow ! What incredible flavor. I was nevous hwo it would come out but the taste was silky and smooth. Mine turned out a bit more coral colored than this deep red. I used pre cooked beets from Trader Joe's and down early girl tomatoes. This is a keeper !

Really delicious
I only just received my vitamix yesterday and made this tonight and was really delicious, I added cashews instead of macadamias as I didn’t have any. I put in 2 large beets and a bunch of cherry tomatoes plus 2 cloves garlic and double the amount of water. Was really yummy :)

Hot blend!
Came out hot and silky! I used vegetable stock instead of water and the bouillon. Also I toasted and ground my own cumin and added toasted ground coriander as well as salt and fresh ground black pepper. One last touch was a bit of turmeric for supplement properties. A good base that could help round out a meal.

Delicious & Creamy
This soup is the first thing I've made and I love how easy it is to make something so healthy and delicious. Incredible how creamy it is without adding extra fat. I substituted canned whole tomato and almonds and garnished with fresh Italian basil. I will definitely make this again.

Good for my 1st soup
Beautiful color and texture. Will make this again with one beet. Since I didn’t have a scale I added 2 medium sized beets. The soup had a very earthy taste to it. Added chicken broth to mellow the flavor a bit.
