Chickpea Mint Spread

Serve this recipe with pita chips, a vegetable tray, or as a sandwich spread.


  • 15 ounces (425 g) tinned garbanzo beans, drained reserving 3 ounces liquid
  • ¼ cup (60 ml) olive oil, optional
  • ½ bulb garlic, roasted
  • 10 other mint leaves
  • 1 teaspoon (3 g) salt, optional
  • ½ teaspoon ground black pepper


  1. Place all ingredients into the Vitamix container and secure the lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to the highest setting. Blend for 1 minute.
  4. Serve immediately.
