Cranberry Coconut Squares
The light, mild flavor of shredded coconut balances the tartness of the cranberries in this holiday dessert.
Crust
Ingredients
- ¼ cup (45 g) margarine
- ¼ cup (50 g) granulated sugar, or Date Syrup to taste
- ½ cup (60 g) whole wheat flour
- ½ cup (60 g) all-purpose flour
- ⅛ teaspoon salt
Directions
- Heat the oven to 350°F (180°C).
- To make the crust, place margarine, sugar, flours, and salt into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 5.
- Blend for 15 to 20 seconds, using the tamper to press the ingredients into the blades. Remove and press into the bottom of a sprayed 8-inch square pan. Bake for 12 minutes, until just barely golden around the edges.
Topping
Ingredients
- 1 large egg
- 1 cup (200 g) granulated sugar
- 2 Tablespoons all-purpose flour
- ½ teaspoon baking powder
- ⅛ teaspoon salt
- ¼ cup (60 ml) lemon juice
- 1½ cup (150 g) cranberries
- ½ cup (35 g) unsweetened flaked coconut
Directions
- Place large egg, sugar, flour, baking powder, salt, and lemon juice into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 15 seconds.
- Sprinkle the cranberries and coconut evenly over the baked crust. Pour the lemon mixture from the Vitamix container over top.
- Bake for 25 to 30 minutes until golden and set.
- Cool completely and cut into squares.

I am new to using my Vitamix, and was excited to make some different Christmas cookies using it. This recipe looked on the healthy side, if you forget the sugar in the topping. However, the butter for the crust just jobbed up in the bottom of the Vitamix, and i ended up melting the butter and starting over. Also, my Vitamix doesn't have a High setting, so i wasn't sure where to go with that. My cranberries just sat on top, and didn't sink down into the crust like in the photo. Not sure what i did wrong, hope it at least tastes good. Don't think i will be able to share it with my neighbors along with my other Christmas cookies.

Super easy and delicious recipe. For sugar, I substituted the Whole Foods 365 artificial sugar alternative and for flour I used coconut flour. They came out great - if anything I would double the recipe next time.

Delicious!
I made this today and must admit, I realized partway through that I didn't have cranberries on hand, so I used rhubarb, raspberries, and currants instead and the bars still turned out fantastic! This was my first time using my Vitamix for a baked good recipe and I am very happy!
