Hollandaise Sauce

Create a restaurant-quality hollandaise sauce to drizzle over freshly cooked asparagus.

  • 4 large pasteurized egg yolks
  • 1 Tablespoon lemon juice
  • 1 teaspoon salt
  • 1 pinch cayenne pepper
  • 1 cup (225 g) unsalted butter, softened


  1. Place the egg yolks, lemon juice, salt and cayenne/hot sauce into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 4.
  4. Blend for 30 seconds.
  5. Remove lid plug and increase speed to Variable 5.
  6. Slowly add melted butter in a thin steady stream, until mixture becomes thickened, approximately 55 seconds. Serve immediately.


Please be aware of what container size you are using. If you are using the Low-Profile container you will need to double this recipe.
