The perfect filling for Lemon Bars or serve it chilled on top of your favorite dessert.
- ½ cup (120 ml) lemon juice
- 5 large eggs
- 1½ cup (335 g) granulated sugar
- ⅛ teaspoon salt
- Zest of 3 lemons
- ½ cup (110 g) unsalted butter, cut into pieces
- Place lemon juice, eggs, sugar, salt and zest into the Vitamix container in the order listed and secure lid.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 5 minutes.
- Reduce speed to Variable 5 and remove the lid plug. Add butter, 1 piece at a time, through the lid plug opening incorporating butter completely between additions.
- Replace the lid plug and increase speed to Variable 10.
- Blend for 30 seconds.
- Chill before serving or allow to cool slightly and serve at room temperature.

Rated 4 out of 5 by EddC from Figured out the fail So, the first time I made this it wouldn't thicken. Then I realized that after I raised the speed to 10, I never flicked the switch to High. I fixed my first batch, though, by adding the juice of another lemon to anither egg, then I put it all on the stove and kept whisking until it bubbled. Refrigerated it, and it was amazing.

Rated 5 out of 5 by MrMurphy from Worked great for me! I was skeptical about trying this but decided to go ahead because I didn’t feel like standing over the stove and stirring in this heat. Now I’m a believer! My problem was that I couldn’t find where on my dial “ high” was so I processed it on 10 throughout. Worked great. I’m wondering if it would work as well with other lemon curd recipes or if there something in this particular combination that’s needed to get it to emulsify. Anyone know?

I substitute monk fruit, erythritol and stevia for the sugar. It turns our thick and creamy every time. My daughter in law makes it with limes instead of lemons. We like it on toast, or on angel food cake or scones or with berries or fruit. Sometimes I eat it plain. It is also yummy mixed 1/2 and 1/2 with plain Greek yogurt for a sugarfree treat with some protein.

Rated 5 out of 5 by Patrick52 from This recipe is Wonderful! This Vitamix recipe is simple and the results are amazing. I use Meyer lemons when in season for an even better result. It makes 4 half pint jars of curd. The Vitamix makes the job so easy and it comes out the same every time. The secret to consistent results is making sure each piece of butter is fully incorporated before adding the next piece. It is already gelled while it's still hot in the pitcher.
