Thyme for Tomato Soup
Indulge in the wholesome flavors of this savory tomato soup, complete with fresh herbs and vegetables.
Ingredients
- 1½ cup (360 ml) water
- 14½ ounce (410 g) canned diced tomatoes
- 2 Roma tomatoes, quartered
- 1 carrot, halved
- 2½ ounce (70 g) sun-dried tomatoes
- 1½ Tablespoon onion, peeled, diced
- 1 garlic clove, peeled
- 1½ Tablespoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
- 1 Tablespoon tomato paste
- ½ bouillon cube
- ½ teaspoon flax meal
- ½ cup (120 ml) whole milk
Directions
- Place all ingredients into the Vitamix container in the order listed and secure lid.
- Select Variable 1.
- Turn machine on and slowly increase speed to Variable 10, then to High.
- Blend for 6 minutes 30 seconds, using tamper only if needed, until mixture is hot. Serve.

Very good tomato soup
I loved this soup - it was flavorful, very smooth, and creamy. However, I made the following alternations to the original recipe:
• Omitted the Oregano (based on other reviews)
• Increased the Vegetable bouillon cube to 1 whole (vs ½ cube)
• Increased Onion to ¼ of a whole medium onion (could probably go up to ½)
• Added 1T white granulated sugar
• Substituted Half and Half for the whole milk
Otherwise, I followed the recipe to the letter. Next time I make this soup, I will probably substitute thyme spice in place of fresh thyme. The fresh thyme was too much work. Also, this really makes 4 serving not 5.

with modifications it's great
Double or triple the onion and garlic and sautee for just a minute or two with 1 T evoo, the carrot, and thyme before you puree (omit oregano as others suggest). I also used chicken stock instead of water and omitted the fresh tomatoes and the bouillon (didnt have any), doubled the tomato paste, and added s&p to taste. I know that's a lot of modification but the soup was delicious. I think the problem with Vitamix recipes is the easiness/nutrition benefit of not cooking ingredients also avoids releasing the flavors of those ingredients. the quick sautee makes a world of difference

Cashews (Instead of Milk)
Followed the recipe. I did add salt & pepper. Some recipes just don't state it, they assume S&P for these types of recipes.
I replaced the milk/cream with a handful (1/4 to 1/3 cup) of cashews. The only reason I keep cashews (stored in the refrigerator/freezer) is for my blender based soups.

Nice fresh taste after adding salt
The soup has a very nice freshness to it however the oregano is too bitter and raw tasting and I will omit it in the future. This did taste quite flat until I added about 1/2 tsp salt. which boosted the flavour a great deal. My tomatoes were not very sweet so I added 1/2 tsp sugar which helped balance the flavour but I doubt the sugar would be necessary when tomatoes are in season.

needs tweaking
The fresh oregano makes this soup taste too much like the tomato plant and leaves. I will make this again, but will leave out the oregano and use basil instead. It also needs some salt, too.

Tomato Soup
I made the recipe today with grilled cheese. I thought soup was flat and unbalanced. It needs salt and I might try subsituting chicken broth instead of water. I agree with earlier reviews, the fresh oregano was good, but dominating, Next batch, I will use half the oregano and a whole chicken cube.

Lacks body
Followed soup recipe and a few of the "recommended " changes. Soup lacks body and full flavor. Wil try adding some cashews and eliminating the oregano.
