Mashed Cauliflower
This creamy mashed cauliflower recipe is a delicious healthier alternative to mashed potatoes with just roasted cauliflower, homemade cashew milk, salt, and pepper.
Ingredients
- ½ cup (120 ml) cashew milk
- 2 heads (1.2 kg) cauliflower, chopped, roasted
- 1 teaspoon kosher salt, optional
- ½ teaspoon ground black pepper
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 1 minute, using the tamper to press ingredients toward the blades. Serve immediately.
Notes
For extra flavor, try adding freshly ground black pepper and fresh herbs when making this puree.

Who needs mashed potatoes?
Fantastic recipe. Roasting the cauliflower gives it a wonderful carmelized taste. Great stand in for mashed potatoes. You will need to use the tamper as it gets stuck at the bottom.

Not soupy if you follow the recipe....
Turned out great for me. If you use the listed WEIGHT of cauliflower, and not just 2 randomly sized heads, AND then roast it sufficiently so that the majority of the moisture is cooked out, (and measure the cashew milk carefully) it should come out creamy, not soupy. Alternately, start with half the amount of milk, and if it doesn't blend well on the first try, add the remaining milk & blend again.

Great if you want soup.
way too much milk and 30 sec puree time turns this into cauliflower soup. Use at least 1/3 of the milk to start and pulse the vitamix for about 5 secs a time using the mortar until you get the right consistency. a little butter also helps.

Cauliflower Soup
I wish I'd read the other review before my attempt. 1 cup of soy milk was too much and yielded a bisque soup consistency. I would try 1/2 cup and less blending time at lower speed.
