This nutritious beverage is balanced with the sweetness of dates and the citrus of lime to create a refreshing combination.
- 2 cups (500 ml) water
- 2 Tablespoons chia seeds
- 1 lime, peeled
- 6 dates, pitted
- Place chia and water into a sealed container and refrigerate overnight.
- Place chia mixture, lime, and dates into the Vitamix container in the order listed and secure the lid.
- Select Variable 1.
- Switch machine to start, slowly increase speed to Variable 10, then to High.
- Blend for 35 seconds, or until desired consistency is reached. Divide into two glasses and serve immediately.

It's so good that I get my chia seeds soaking for the next batch as soon as I've made a smoothie. One of my favorite combinations is the chia water, 5 dates, frozen blueberries and lemon. Yum!
