Royal Icing
This is the ideal icing for decorating holiday sugar cookies! Goes on easily and dries hard. For a thicker icing, simply add a bit more powdered sugar until desired consistency is achieved.
Ingredients
- 6 (115 g) egg whites
- 1 teaspoon lemon extract
- 6 cups (1 kg) powdered sugar
- food coloring
Directions
- Place egg whites in your Vitamix container and secure the lid.
- Select the lowest setting, start the machine, and blend for 4 minutes, or until egg whites reach stiff peaks. Stop the machine.
- Remove lid and add lemon extract and powdered sugar. Blend for 30 seconds on lowest setting, or until combined.
- If desired, add coloring and mix well. Transfer into piping bag.

Can't get stuff enough
Couldn't get stuff peaks to form. Came out very funny and had to use the tamper ice the sugar was added. Blended with the buttercream icing and was a good consistency. It seemed to set up a little better after it was alone in the container for 30 minutes.

Not Gluey Enough
I used a Creations II Vitamix with the variable speed dial and blended on level 1. The egg whites never really made peaks, but I was worried about over mixing, so I stopped at 4 minutes. The royal icing was not gluey enough for gingerbread houses.
