Apple Acorn Squash Soup
A wonderful fall soup with fresh apples and acorn squash picked during autumn harvest.
Ingredients
- 3 cups (420 g) acorn squash, peeled, seeded, and cut into 1" cubes
- 1 Tablespoon olive oil, optional
- ½ small (60 g) small onion, peeled
- 1 garlic clove, halved
- ½ (90 g) apple, halved, seeded
- ¼ teaspoon dried thyme
- ⅛ teaspoon salt
- 2 cups (480 ml) low sodium vegetable broth, stock
Directions
- Steam squash in a steamer or microwave until fork tender. Sauté onion and garlic in oil until onion is clear and tender.
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed. Blend for 3 to 5 minutes, or until heavy steam escapes the lid plug opening.
Notes
By blending ingredients that have just been cooked and are still hot, the blend time is cut by several minutes, bringing dinner to the table that much quicker!

Delicious Recipe (with a few modifications)
This recipe is a great starter, a very healthy and filling meal. The only modifications I made were using 4 sprigs of dried thyme, medium onion instead of a small one, twice as much garlic, and I added some chopped fresh rosemary as I was sauteeing the onions and garlic. This gave the soup a lot of good flavor. I also steemed 2 acorn squash (which was probably more than 3 cups full) and added all of the steemed squash to the soup. This helped cut down the acidity but made the soup sweeter. Both ways yielded delicious results!

This soup is terrific! And it's incredibly healthy, which is rare in soups that usually use cream bases. Well done!

Good, rich soup
Good soup the is very thick and savory. Good to make in advance and take for lunches. Very filling. This soup is not sweet at all - so if you are looking for a slightly sweet soup this would not be for you. However, if you are looking for a rich savory soup, this soup will probably work.

Very good soup
I followed the recipe exactly as written. It turned out a very good base but I felt like it needed more salt. I would add a quarter to a 3rd teaspoon of salt. I'm not sure I will make it again because cutting in preparing a fresh, hard acorn squash was quite a job.

Disappointed
This soup was so disappointing. Followed directions. Want to return blender, but husband feels I should give it another try.
