Carrot and Raisin Muffins
Sweet raisins and carrots marry well in this snack-sized bite for a quick breakfast or afternoon tea.
Ingredients
- 1⅔ cup (265 g) self-rising flour, or whole wheat flour
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon pumpkin spice
- ⅔ cup (100 g) raisins
- ¾ cup (90 g) carrots, halved
- 2 large eggs
- ¾ cup (180 ml) applesauce, or honey
- ⅔ cup (150 ml) light olive oil
Directions
- Preheat the oven to 350°F (180°C). Spray a 12 cup muffin tin with cooking spray or line with paper liners.
- Place flour, baking soda, and spices in a medium-size mixing bowl and stir lightly. Set aside.
- Place carrots into the Vitamix container and secure lid.
- Start the blender on its lowest speed, then quickly increase to Variable 6, using the tamper to press ingredients toward the blades
- Blend for 6-7 seconds until very finely chopped. Stop machine and remove lid.
- Add eggs, sugar and oil to the carrots in the Vitamix container and secure the lid.
- Start the blender on its lowest speed, then quickly increase to Variable 5, using the tamper to press ingredients toward the blades
- Blend for 30 seconds until thick and creamy.
- Pour carrot mixture into flour mixture with raisins and fold to combine. Spoon the mixture into the prepared muffin tin.
- Bake for 20-25 minutes until golden brown. Transfer to a wire rack to cool, then serve.
Notes
These can be kept in an airtight container in the refrigerator for up to 5 days or frozen for up to 1 month.

Carrot Raisin Muffins
I have owned my Vitamix for well over 10 years and it is fabulous!!! This is one of our favorite recipes for a quick breakfast, or to add to my husband's lunch etc.. Freezes very well. A great grab and go breakfast food. We even bought a Vitamix for a dear friend that came and painted the inside of our house for us. Needless to say, we quickly became their BEST friend!

Missing Ingredient & Inaccurate review response
After selecting the 32 oz container size, there is a note recommending the weighing of flour instead of measuring it. The problem is the flour is missing from the list of ingredients. If flour is not suppose to be listed in the ingredients then the note shouldn't be there either. Vitamix inaccurate response to another reviewer regarding as to when to put the raisins in the mix. Vitamix's review response on the raisins indicated to add them in at step 11, but the procedure list only goes to step 8. There is no step 11 (to any of the selectable container size recipes). Apparently Vitamix is not paying attention on this recipe. Please fix the 32 oz version ingredient list (note if necessary), and correct your response to that reviewer as to when raisins should be added to the mix. Thank you.

Very good. Could also be vegan
Made these with apple sauce instead of eggs for a vegan version (5 Tsp instead of 2 eggs). Came out great.

Wonderfully Yummy
Second recipe to try with my new Vitamix; over abundance of carrots to use up. Easy to do, instructions are perfect. Made this recipe twice already. Once as directed. Second time without raisins, as son does not like them, used raw sunflower seeds 3/4 c, Vitamix blended them perfectly and recipe was still great with a new flavor added. Thanks for the recipe.

Missing Ingredient in 32 oz container recipe
Nice to see Vitamix updated the recipe to identify when to add in the raisins (step 7, across all container size recipe versions). However, still missing flour in the 32 oz container recipe version. How much flour to use?

We found these muffins somewhat bland and lacking taste. Even found them a bit chewy.
