Chicken Potato Spinach Soup
A home-style soup with the perfect blend of creamy and chunky texture. (A delicious use of last night's cooked chicken breast, too!)
Ingredients
- 1 cup (240 ml) chicken broth
- 1½ cup (360 ml) milk, or cashew milk
- ½ cup (80 g) medium onion, peeled
- 3 (415 g) medium russet potatoes, baked, halved, cooled, divided use
- ½ teaspoon dried rosemary
- 1 Tablespoon cooked spinach
- 1 (125 g) boneless, skinless chicken breast, cooked, cubed
- ½ teaspoon kosher salt, optional
- ½ teaspoon ground black pepper
Directions
- Place broth, milk, onion, two potatoes, and rosemary into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed, then quickly increase to its highest speed.
- Blend for 6 minutes or until heavy steam escapes from the vented lid.
- Reduce speed to Variable 3 and remove lid plug.
- Add spinach, one potato, chicken, salt, and pepper through the lid plug opening.
- Blend for an additional 15 seconds.
Notes
This recipe can easily be doubled in the 64-ounce container to have leftovers for the week. If desired, onions may be sauteéd before blending for a milder taste.

Tasty and easy!
This recipe is so easy and incredibly tasty. I lightened it up a little by substituting 1 C chicken broth for 1 C milk (only used .5 C milk) and used three baby russet potatoes. I sautéed the onions with a little garlic. I, too, was initially confused with the spinach measurement, but then just added 1 C fresh spinach. Will make this again since we almost always have all of the ingredients readily available.

Love It!!!
This is my go to soup throughout the year. It is very easy to make. I bake the potatoes, so that is the longest part of this recipe, about 1 hour. My husband and I like the soup on the thicker side, so I add larger potatoes. It's always delicious and quite filling.

Clarification from previous post
I have not made this but wanted to clarify for a previous reader. There are 3 potatoes. The first step is to use 2. The last step is to include the 3 rd potatoe do the recipe is correct.

I haven't made this yet but the recipe says to put both potatoes into the blender on the first step. Then, as the last step, it says to put in the "reserved potato." I think you mean to put just one potato in at the beginning, and then put in the "reserved potato" at the end?

Delicious Soup
I have made this soup quite a few times and it is so easy to make. The soup is very filling so all you need extra is maybe a salad.
