Chile Lime Shrub

A tequila-based cocktail, balanced with honey, crushed red pepper, and citrus.


  • 2 limes, peeled
  • ¾ cup (180 ml) apple cider vinegar
  • ¾ cup (150 g) granulated sugar
  • 2 Tablespoons honey, or other sweetener, to taste
  • 2 teaspoons crushed red pepper flakes
  • 2 cups (480 ml) tequila blanco
  • 12 fluidounces (360 ml) Campari
  • ¾ cup (180 ml) fresh lemon juice
  • ¾ cup (175 ml) lime juice
  • 2 cups (260 g) ice cubes


  1. Place the limes, vinegar, sugar, honey, and red pepper flakes in a medium saucepan and bring to a boil.  Reduce heat to a simmer and cook 8 to 10 minutes, until slightly reduced.  Let cool and then strain into a jar, cover, and chill.
  2. Place tequila, Campari, lemon juice, lime juice, chilled vinegar mixture, and ice cubes into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 5.
  5. Blend for 20 seconds.
  6. Divide between glasses filled with ice.
