Coconut Goji Berry Smoothie
Hemp seeds and chia seeds help thicken this smoothie, while also providing a nutritional boost.
Ingredients
- 2 cups (480 ml) coconut milk
- 2 small (240 g) small bananas, peeled
- 2 cups (60 g) fresh spinach
- 6 Tablespoons (40 g) goji berries
- 2 Tablespoons (20 g) chia seeds
- 2 teaspoons hemp seeds
- 1 teaspoon vanilla extract
- 2 cups (280 g) frozen mixed berries
Directions
- Place all ingredients into the Vitamix container in the order listed and secure the lid.
- Start the blender on its lowest speed and quickly increase to its highest speed.
- Blend for 1 minute, or until desired consistency is reached, using the tamper to press ingredients toward the blades.
Chef's Notes
Adding seeds to your smoothies is a great way to add fiber, fat, and protein. You can easily switch out coconut milk with a homemade nut milk made in the Vitamix.

Interesting flavour
Flavour is not bad, but is a little challenging. Certainly had to get use to it. Possibly the goji berries. Also, came out a chocolate brown colour rather than the nice red in the photo

It was oaky
It was alright, The taste was not the greatest and I was looking for this beautiful color, which is what made it look so appetizing, but it came out this weird funky. I still tasted it, not what I thought it was going to be. I will play around with it again and make adjustments, then if not great I will try another recipe

I love the uqinueqness of this smoothie. It's unusual combination of goji berries and mixed berries...was delectable! I used pomegranate seeds, maine bluberries, black berries and rasberries (frozen). I wieghed my ingredients and I noticed I get a more consistant and beeter flavor balance A+! I love the combo it taste like you almst added yogurt and chocolate but could suprise you that there isn't and I excluded the honey to make it more diabetic friendly

Makes a great smoothie bowl!
I thought this was great. I used strawberries and blueberries for the frozen berry mix and tweaked it a little to make a smoothie bowl (just reduced coconut milk to 100 ml), then topped with coconut, more hemp hearts, and berries. It was delicious. The color is a bit brownish from the spinach but using berries with a lot of color helps.

Good smoothie
Overall good smoothie. The colour is not bright red more of a purple dark and it is probably due to the concentrated green in spinach. Taste is good and consistency also, however, i added one extra cup of water as the original 1 cup made it very thick.
